Cooking Supplies Needed for Simple and Tasty Vegan Banana and Carob Chip Cookies

  • 1 Medium mixing bowl
  • 1 Small mixing bowl, for dry ingredients
  • Mixing spoon
  • Measuring cups
  • Measuring spoons
  • Rubber spatula
  • Electric mixer, optional, for blending wet ingredients. Wet ingredients may also be mixed by hand using a fork
  • One cookie sheet
  • Wire cooling rack

Ingredients for Low-fat and Healthy Vegan Banana and Carob Chip Cookies

Dry Ingredients:

  • 1 cup white flour
  • ½ cup baking cocoa
  • ¾ cup rolled oats
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients:

  • 1 large banana, finely pureed
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar
  • 1 tablespoon vegetable oil
  • 1/3 cup water
  • 1/3 cup shredded coconut
  • 1/3 cup carob chips

Small bowl of white granulated sugar, to roll cookies in (optional)

Directions:

  1. Grease cookie sheet well, using cooking oil of choice.
  2. Preheat oven to 350 degrees Fahrenheit.
  3. In small mixing bowl shift together dry ingredients (see list above). Set aside.
  4. In large mixing bowl cream together wet ingredients (see list above) well, using mixing spoon.
  5. Stir dry ingredients into wet ingredients in small increments until cookie dough batter is well mixed.
  6. Add 1/3 cup carob chips and 1/3 cup shredded coconut, if desired.
  7. Mix ingredients well. Mixture will be slightly sticky.
  8. Roll rounded tablespoons of cookie dough in a small bowl of granulated white sugar, if desired.
  9. Cookie batter will spread slightly in oven. Bake the banana carob chip cookies on middle shelf of oven until tooth pick comes out clean when inserted, so around 10 to 12 minute.
  10. Let cool slightly before removing from cookie sheets. Use metal spatula to remove banana vegan carob chips from cookie sheet.

Make sure to store vegan banana and carob chip cookies in an airtight container to keep moisture longer.
